Our vineyards
All our wines and cavas are made from grapes from vineyards cultivated organically and biodynamically.
At Parés Baltà we have 5 estates located in the Penedès region, at altitudes ranging from 180 to 800 metres above sea level and from 10 to 50 km from the sea. This disparity of altitudes and proximity to the Mediterranean gives us a great diversity of climates and terroirs that define and characterise the 16 grape varieties we grow, giving our wines and cavas the ability to express the intrinsic qualities of their place of origin.
Parés Baltà
This is the estate that surrounds the 1790 farmhouse, the cellar and the cave. Its vineyards are between 210 and 235 meters above sea level and here we find varieties such as Xarel·lo and Macabeu.
Cal Miret
One of the most emblematic properties of the Penedès, with more than 500 years of history. This estate is home to Grenache vineyards that are over 50 years old and a Xarel·lo vineyard that’s nearly 100 years old.
Les Valls – Les Torres
Our highest-altitude property is located within the Foix Natural Park, where the main river of the Penedès is born, and where we are recovering centuries-old terraces for the cultivation of vines.
Els Pujols
La Torre dels Pujols is an old manor house located in the upper part of the vineyard. It is here, on this historic estate, where the Cusiné family began making their organic wines and cavas.
La Torreta
This estate, closest to the sea and with the lowest altitude, is located between the Foix Natural Park and the Garraf Massif. Its vineyards are dedicated exclusively to the cultivation of red grapes.
Parés Baltà
This is the estate that surrounds the old farmhouse, the cellar and the cava. The origins of Parés Baltà.
Type of soils
Chalky, loamy, deep soils, with good drainage. Excellent water retention.
Grape varieties
Xarel·lo, Macabeu, Sumoll, Chardonnay, Syrah, Merlot, Cabernet Sauvignon.

Rich and complex.

Type of soils
Limestone, deep-brown clay, which force the roots to grow very deep, so the vines are well-prepared to face periods of drought.

Rich with mineral notes.

Les Valls – Les Torres
From this estate springs the Foix river, the most important river in the Penedès. For centuries, the ancient terraces were used for growing red grape varieties until they were wiped out by Phylloxera (wine pest). The terraces have been restored and brought into use again for wine growing.
Type of soils
In the lower areas the soils are calcareous and well-drained, with pronounced slopes and very stony areas, with very few nutrients. They are very stratified soils. In the upper zone there is a large proportion of clay and chalk.

Parellada, Xarel·lo, Malvasia de Sitges, Sumoll, White Grenache, Red Grenache, Gewürztraminer, Chardonnay, Sauvignon Blanc, Tempranillo, Pinot Noir, Merlot.

Els Pujols
The Torre dels Pujols masia (manor) is situated here, at the top of the vineyard and it is where the family produced their first bottle of wine.
Type of soils
Gravelly, superficial, well-drained, with little water retention that limits the growth of the vines.

Macabeu, Chardonnay, Syrah, Merlot, Cabernet Sauvignon.

Dense full-bodied wines.

La Torreta
This estate is exclusively dedicated to red varieties and surrounded by the Foix Natural Park and the Garraf Massif.
Type of soils
Limestone with lots of marine fossils. They are superficial gravel floors with many rocky elements and sharp slopes that make life difficult for the vines, which make them easily suffer from water stress from droughts.
Grape varieties
Tempranillo, Merlot, Cabernet Sauvignon, Cabernet Franc.

Elegant and aromatic.
