100% Syrah from old vines cultivated with Organic farming.
Cheddar cheese, game and spicy stews, Brownies.
Serve at 16-18ºC.
Maceration and fermentation 400L new French oak barrels at a controlled temperature of 24-29ºC. We made manual pigeage 3 times per day during the maceration process. Prolonged during 25 days.
Ageing 13 months in new French Allier oak barrels.
Very intense violet.
Impressive nose chowing both intensity and complexity. Expressive animal notes covering a core of ripe dark fruits of plums and black mulberries.
Spicy notes of dark bitter chocolate and sweet tobacco combined with the toasty notes and the vanilla from the oak. The palate is silky and velvety, with great concentration and body but also very clean and almost stringent fruit to balance the concentration. The finish is long and refreshing.
