Cuvée de Carol, a cava with a unique personality.

Macabeu from an old vineyard of Cal Miret combined with Chardonnay cultivated at high altitudes, together with a touch of oak barrel, give us a structured and complex cava that can have a very long ageing.

It reminds us of a lady from the haute bourgeoisie, full of elegance and refinement. A cava made to satisfy the most exquisite palates.

Icona raïm Parés Baltà 60% Macabeu and 40% Chardonnay cultivated applying Biodynamic farming.
Maridatge Parés Baltà Enjoy it with hearty dishes; legume and poultry stews, and roasted white meat.
Icona Premsa Parés Baltà The Chardonnay ferments at 16-20ºC in new french oak barrels during 13 days. Macabeu ferments in stainless steel tanks at 16ºC during 15 days and with daily battonage at the end of the fermentation.
Icona bota Parés Baltà Ageing over thin lees for two months with
battonage 3 times per week for the Chardonnay.
Icona segona fermentació Parés Baltà Second fermentation in the bottle following to the traditional method, with ageing for 90 months.
Icona aspecte visual Parés Baltà Straw yellow with hints of new old color.
Icona nota de tast en nas Sophisticated aroma that comes from ageing in oak barrels. It has creamy notes that remind us at candied fruit with toasty hints very well balanced.
Icona sabor-gust In the mouth we can appreciate that it is a different cava. Long and persistent aftertaste. Complex and with very well integrated dioxide.
