Parés Baltà Brut is the youngest sparkling wine in our entire range of cavas, and therefore it exudes freshness. This cava is light, fruity, and citric. Its lively, fast bubble reflects its youth. On the palate, it brings memories of white flowers and fruits such as green apple or pear. It is ideal by the glass and for pairing with all kinds of appetizers, salads, light canapés, or seafood.

At Parés Baltà, we produce organic wines and cavas born from our passion for the natural:
ORGANIC CAVAS
All our cavas are organic, and to make them, we mainly use the traditional grape varieties of Penedès: xarel·lo, macabeo, and parellada. All our vineyards have been biodynamically cultivated since 2012 and organically since always, certified since 2002. To maintain the maximum quality of the grape and must, the harvest is entirely done by hand and, in some historic vineyards, in small 25kg boxes to avoid oxidation of the must.
INTEGRAL PRODUCER aka ELABORADOR INTEGRAL
An Integral Producer is a winery that controls the entire production process of its cava, from harvesting to bottling, within its own facilities and vineyards. We obtained this recognition from the DO Cava in 2022, along with only 13 other wineries. This seal guarantees greater control over the quality of the final product and greater traceability throughout the process, resulting in a high-quality and exclusive sparkling wine.
CAVA DE GUARDA AND CAVA DE GUARDA SUPERIOR
Cava de guarda is one that undergoes aging on its lees for a minimum of 9 months in the bottle. Cava de guarda superior, on the other hand, must undergo a minimum bottle aging of 18 months, resulting in more complex and elegant aromas.
THE ORIGIN OF OUR CAVAS
Our cavas come from grapes grown in our 5 estates in Penedès and from neighboring and trusted farmers who share our philosophy of respect for the land. Over time, and for various reasons, other Spanish wine regions began to produce sparkling wine under the umbrella of the DO Cava. In 2020, the DO Cava decided to create zones and subzones within the denomination to better identify the different terroirs, characteristics, and singularities. Some of these are:
- COMTATS DE BARCELONA: Valls d’Anoia-Foix, Serra de Mar, Conca del Gaià, Serra de Prades, and Pla de Ponent.
- EBRO VALLEY: Alto Ebro and Valle del Cierzo.
- ALMENDRALEJO VINEYARDS
- REQUENA
Parés Baltà is located in the Comtats de Barcelona area, specifically in the Valls d’Anoia-Foix subzone. Soon, all this information will appear on the labels of all our cava bottles.
