As it is being common in every vintage, the grape varieties used for the Cava elaboration have been the first ones to be ready and collected at Pares Balta.This year, the harvest has arrived a little bit earlier than usual due to the drought, which has affected the plant in all its vegetative cycle. Indeed, whenever the rain water is insufficient, the plant suffers and the vineyard yield is lower, together with a smaller grape seed.
In spite of these precedents, we are certainly very hopefull with this new vintage! The grape shows excellent sanitary conditions and good levels of sugar and acidity. In addition, the flavours found in the grapes’ skin are expected to be larger than in previous harvests as a consequence of a better skin-pulp relation.
