Pruning is an essential tasks for the good development of the vine.
Once the harvest is over, when the vine has given us its fruit, it’s time for rest. Autumn, with its falling leaves, strips the vine bare and makes it fall into a deep slumber which will last well into March.
But the work of a winegrower never ends, and it’s during these winter months when we carry out one of the most important tasks of the entire life cycle of the vine: winter pruning.
This pruning consists of cutting the vine shoots, which in the wild can otherwise reach lengths of up to 30 metres.
But why is this activity, which goes back a thousand years, entrusted to only the most expert and skilful winegrowers?
Pruning is what determines the quantity of grapes that the vine will produce – we only leave the branches and shoots that are necessary to produce a balanced yield. Pruning also allows us to determine the lifespan of the vine. We do this by using the pruning method which is the most respectful for the vine: respectful pruning which consists of seeing where the sap circulates to avoid causing large wounds, which is important for the longevity of the plant.
At Parés Baltà we start the pruning at the end of November and it continues until well into February.
Our almost 200 hectares of vineyards, cultivated applying organic and biodynamic farming, are spread out across five estates, located at different altitudes, planted in different types of soil and with different microclimates, so they require personalised attention that only the experienced hands of our farmers know how to give.
