A delicate balance between freshness and creaminess.
100% cultivated applying Organic and Biodynamic farming.
Oysters and shellfish, poultry and grilled fish.
Serve at 10-12ºC.
After a light skin maceration during 4 hours, the grapes were lightly pressed and then fermented in stainless steel tanks during 18 days at an average temperature of 16ºC. Once the fermentation was finished, the wine was kept in contact with the fine lees for 3 months, applying daily battonage some minutes per day.
Very pale yellow with green tinges. Bright and clean.
The very varietal nose clearly combines the aroma of mature pear, almost caramelized, and banana with creamy notes coming from the work of the fine lees.
On the palate, the wine is fresh with a good balance and acidity. It reminds us of a pear Tarte Tatin with Crème Anglaise.
