Selectio is the fruit selected from the best estates and native varieties,
together with some Chardonnay, with special importance to the Xarel·lo,
which is the “soul” of the cava and provides a major structure and volume in the mouth.
A cava that goes beyond the tradition, but without forgetting it.
|54% Xarel·lo, 30% Chardonnay, 11% Parellada and 5% Macabeu.|
|Poultry or fish stew, goat melted cheese with nuts.|
|Fermentation at 16˚ C in stainless steel tanks for two weeks.|
|No oak ageing.|
|Second fermentation in bottle, following the traditional method, with a minimum ageing of 90 months.|
|A delicate cava, with golden notes and extraordinary bubbles that form a persistent crown.|
|Subtle aroma of mature fruit, also from ageing, with creamy notes.|
|In the mouth it reaffirms its elegance, proving to be full with good length.|
|Serve at 6-8°C.|
