Per aconseguir-ho, hem de tractar la vinya com un \u00e9sser viu.\nNom\u00e9s aix\u00ed podrem elaborar vins vius, amb vitalitat i expressivitat.<\/p>\n\n\n\n<p>D\u2019aqu\u00ed que optem pel cultiu biodin\u00e0mic i ecol\u00f2gic a la vinya, aix\u00ed com pel treball de <strong>m\u00ednima intervenci\u00f3<\/strong> al celler.<\/p>\n\n\n\n<p>Aix\u00ed doncs, \u00e9s essencial que el ra\u00efm sigui de la millor qualitat possible i que es respecti la fruita i el seu car\u00e0cter durant la vinificaci\u00f3.<\/p>\n\n\n\n<p>Partint de la premissa que treballem amb ra\u00efm sa, equilibrat i de baix rendiment, una de les decisions crucials \u00e9s determinar el moment \u00f2ptim per collir cada parcel\u00b7la. \u00c9s per aquest motiu que, abans i durant la verema, fem controls de maduraci\u00f3 exhaustius on analitzem els par\u00e0metres tradicionals de la maduraci\u00f3 alcoh\u00f2lica, com s\u00f3n el sucre i l\u2019acidesa. Tamb\u00e9 controlem la maduraci\u00f3 fen\u00f2lica del ra\u00efm tot fent degustacions organol\u00e8ptiques constants per veure la maduresa de les pells, llavors i polpa.<br>Tot plegat, per obtenir vins i caves de la <strong>m\u00e0xima qualitat<\/strong> i fidels al seu terrer.<\/p>\n<\/div><\/div>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-columns alignfull block-cols is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column text-column col-md-6 col-lg-4 has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#cfccc7\">\n<div class=\"wp-block-group align-middle-items\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"has-text-align-left wp-block-heading\">M\u00ednima intervenci\u00f3<\/h2>\n\n\n\n<p>A Par\u00e9s Balt\u00e0 seguim la filosofia de m\u00ednima intervenci\u00f3 tant a la vinya com al celler, ja que creiem que com menys es manipuli el fruit que ens dona la natura, m\u00e9s autenticitat n\u2019obtindrem d\u2019aquest i, conseq\u00fcentment, dels nostres vins.<br>El nostre objectiu \u00e9s donar protagonisme a la vinya i a les varietats, molt m\u00e9s enll\u00e0 dels processos enol\u00f2gics que puguem aplicar posteriorment al celler.<\/p>\n\n\n\n<p><strong><br>Al celler treballem amb:<\/strong><br>\u2022 M\u00ednim \u00fas de sulfits afegits, per sota del valor m\u00e0xim estipulat per la normativa ecol\u00f2gica. En un sentit estricte dir\u00edem que aquests tipus de vins s\u00f3n els que s\u2019elaboren espont\u00e0niament, <strong>sense afegir ni treure res<\/strong> en tot el proc\u00e9s.<\/p>\n\n\n\n<p>El nostre primer vi natural el vam elaborar l\u2019any 2013 inspirades per la troballa d\u2019unes restes iberes a la nostra finca Les Valls. El primer vi natural sense sulfits afegits que van elaborar la Maria Elena i la Marta va ser el vi <strong><a href=\"https:\/\/paresbalta.com\/ca\/botiga\/vi-ecologic-biodinamic\/microcuvee-vi-de-finca\/amphora-roja-xarello-vino-natural-sin-sulfitos\/\" target=\"_blank\" rel=\"noreferrer noopener\">Amphora Roja<\/a><\/strong>, un 100% xarel\u00b7lo que encara s\u2019elabora avui com el primer dia; en \u00e0mfores d\u2019argila roja que obtenim de la nostra finca Les Valls.<\/p>\n<\/div><\/div>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-columns alignfull block-cols is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column text-column col-md-6 col-lg-4 has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#cfccc7\">\n<div class=\"wp-block-group align-middle-items\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\">Una hist\u00f2ria mil\u00b7len\u00e0ria<\/h2>\n\n\n\n<p class=\"has-text-align-left\">L\u2019any 2008, dins de la nostra finca Les Valls, vam descobrir un jaciment Iber de fa uns 2.500 anys i el 2012 en vam trobar un altre de 2.000 anys d\u2019antiguitat. S\u00f3n els primers vins que es van elaborar al celler familiar i en ells hi trobem equilibri, qualitat i un marcat car\u00e0cter mediterrani.<\/p>\n\n\n\n<p>Tots els nostres escumosos s\u00f3n ecol\u00f2gics, certificats per CCPAE i s\u2019elaboren amb ra\u00efm procedent de vinyes cultivades de forma biodin\u00e0mica.\nVinifiquem el cava segons el m\u00e8tode tradicional o champanoise, realitzant una segona fermentaci\u00f3 en ampolla.<\/p>\n\n\n\n<p>La transformaci\u00f3 m\u00e9s important que pateix el most \u00e9s la fermentaci\u00f3, quan aquest esdev\u00e9 vi. Es tracta d\u2019un proc\u00e9s originat pels llevats existents a la pell del ra\u00efm que transformen el sucre present en el most en diversos compostos, entre ells, alcohol.<\/p>\n\n\n\n<p>Una vegada finalitzada aquesta fermentaci\u00f3 en dip\u00f2sits d\u2019acer inoxidable, es procedeix a la separaci\u00f3 de les mat\u00e8ries s\u00f2lides resultants d\u2019aquest proc\u00e9s i es procedeix a la precipitaci\u00f3 natural per baixa temperatura per tal d\u2019eliminar les \u00faltimes part\u00edcules en suspensi\u00f3 i deixar aix\u00ed el vi net.<\/p>\n\n\n\n<p>Existeixen diferents tipus de vins escumosos, per\u00f2 nom\u00e9s els de m\u00e9s alta qualitat tenen bombolles procedents d\u2019una segona fermentaci\u00f3 a la mateixa ampolla. El proc\u00e9s posterior de crian\u00e7a permet que adquireixin caracter\u00edstiques organol\u00e8ptiques i que guanyin complexitat amb el pas del temps.<\/p>\n\n\n\n<p>A Par\u00e9s Balt\u00e0 elaborem un gran ventall de caves de llarga crian\u00e7a, alguns d\u2019ells arriben a estar fins a 100 mesos. El seu treball es veu clarament en els vins que han elaborat juntes, plens de car\u00e0cter i concentraci\u00f3, aix\u00ed com tamb\u00e9 elegants i equilibrats.<\/p>\n\n\n\n<p>Durant m\u00e9s de 20 anys van compartir les tasques enol\u00f2giques, aportant talent i innovaci\u00f3 al celler. Va ser durant aquesta \u00e8poca, quan en Joan, la meva parella i ara marit, em va endinsar en el m\u00f3n m\u00e0gic del vi.<\/p>\n\n\n\n<p>Va ser un amor a primera vista que va provocar un canvi en la meva carrera professional i em va portar a iniciar els estudis d\u2019enologia.<\/p>\n\n\n\n<p>Un cop obtinguda la meva segona llicenciatura, aquest cop a la facultat d\u2019enologia de la Universitat Rovira i Virgili (Tarragona), vaig decidir ampliar els meus coneixements viatjant per algunes de les regions vin\u00edcoles m\u00e9s famoses del m\u00f3n: Bordeus, Austr\u00e0lia, Borgonya, C\u00f4te du Rh\u00f4ne i Napa.<\/p>\n\n\n\n<p>Quan vaig tornar, em vaig incorporar al celler familiar treballant com a en\u00f2loga i aportant idees noves sobre el cultiu de la vinya i l\u2019elaboraci\u00f3 de vins.<\/p>\n<\/div><\/div>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-columns alignfull block-cols mb-reverse is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column text-column col-md-6 col-lg-4 is-layout-flow wp-block-column-is-layout-flow\">\n<div class=\"wp-block-group align-middle-items\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"has-text-align-left wp-block-heading\">Marta Casas<\/h2>\n\n\n\n<p><strong>En\u00f2loga, Sommelier i Farmac\u00e8utica<\/strong><\/p>\n\n\n\n<p><em>&#8220;El m\u00f3n del vi corria per les meves venes&#8221;<\/em><\/p>\n\n\n\n<p>Vaig n\u00e9ixer a Vilanova i la Geltr\u00fa el pluj\u00f3s mes de desembre de 1976. Vaig passar la meva inf\u00e0ncia acompanyada dels meus avis i bes\u00e0via, que tenien una petita vinya. No em cansava mai de passejar-m\u2019hi amb bicicleta. Tamb\u00e9 ten\u00edem un petit celler al soterrani de casa amb una premsa, algunes botes de 800L i dos dip\u00f2sits de ciment. R\u00e0pidament es va convertir en el meu lloc preferit per jugar.<\/p>\n\n\n\n<p>Vaig estudiar farm\u00e0cia a la Universitat de Barcelona. Durant la carrera, vaig con\u00e8ixer en Josep, qui, anys m\u00e9s tard, es va convertir en el meu marit. Va ser durant aquella \u00e8poca quan se\u2019m va despertar la passi\u00f3 pel vi. De la seva m\u00e0, em vaig introduir als tastos i vam viatjar per con\u00e8ixer algunes de les grans regions vin\u00edcoles del m\u00f3n. Estava tan interessada en la verema i en el proc\u00e9s d\u2019elaboraci\u00f3 que vaig decidir participar en les tasques del celler.<\/p>\n\n\n\n<p>Tot just acabar els estudis de farm\u00e0cia, vaig iniciar la carrera d\u2019enologia a la Universitat de Tarragona, combinant-los amb la meva feina de farmac\u00e8utica.<\/p>\n\n\n\n<p>Quan vaig llicenciar-me, em vaig casar amb en Josep.
